These turned out really light and fluffy. The cherry tomatoes and feta are a lovely combination but I would try these again with a little something more…maybe some basil or some chilli…
Ingredients
- For the muffin
- 100g cherry tomatoes
- 100g feta cheese
- 200g self raising flour
- 50g plain flour
- 1 tsp bicarbonate of soda
- 85g butter, melted and cooled
- 2 eggs
- 200ml milk
Heat the oven to 200C. Quarter the cherry tomatoes and roast in the oven for 20 minutes. Chop the feta into small chunks. Mix the dry ingredients together. Mix the wet ingredients together. Add the wet to the dry then fold in the feta and tomatoes. Spoon the mixture into cases and bake for 16 minutes until golden and firm.
